The aims of this work were to evaluate the fillet yield and the skin area production of wild-caught (male · female) and indoor-reared male Brazilian flounder Paralichthys orbignyanus. Fillet yield of wild-caught Brazilian flounder is high, averaging 53.4 ± 0.7 and 51.2 ± 0.6% to female and male,
respectively. However, indoor-reared male flounder show even higher (P < 0.05) fillet yields of 59.4 ± 0.1%. Flounder weighing around 500 g should yield a skin area of ca.
450 cm2, representing an important sub-product that can be used in the fashion industry. The results of the present study
emphasize the potential for culture and use of sub-products of the Brazilian flounder. |
