Desenvolvimento de novos alimentos para praticantes de atividade física adicionados ou não de Spirulina
Resumo
Os alimentos são essenciais para manutenção do organismo e os nutrientes obtidos
através da alimentação dependem da quantidade e diversidade dos alimentos
ingeridos. A alimentação, o treinamento físico e o estado de saúde são aspectos
fundamentais para o bom desempenho no esporte. Melhorar o desempenho, prevenir
doenças, compensar uma alimentação inadequada, prover mais energia, combater a
fadiga, melhorar a aparência física e atender à demanda de nutrientes específicos,
devido ao intenso nível de atividade física, são as principais razões para justificar o
consumo de suplementos, que são destinados a pessoas que não conseguem suprir
suas necessidades nutricionais somente com a alimentação. A Spirulina á uma
microalga rica em proteína, ácidos graxos, vitaminas, sais minerais e pigmentos,
sendo utilizada como suplemento alimentar. Além disso, esta microalga possui o
certificado GRAS (Generally Recognized As Safe) podendo ser utilizada como
alimento sem oferecer risco à saúde humana. O objetivo deste trabalho foi
desenvolver seis alimentos para praticantes de atividade física, adicionados ou não de
Spirulina. Foram desenvolvidos, repositor hidroeletrolítico, recuperador muscular e
potencializador muscular, todos com e sem adição da microalga. Foram realizadas
formulações e análises sensorias regulares até definição da formulação final. Após
foram realizadas análises químicas e microbiológicas, como também estimada a vida
útil dos produtos desenvolvidos por teste acelerado, através de um modelo
matemático que relaciona o aumento de umidade do produto com a taxa de
permeabilidade ao vapor de água da embalagem. Todos os alimentos desenvolvidos
apresentaram médias de aceitação global satisfatórias, acima de 6,0. As análises
microbiológicas realizadas em todos os alimentos desenvolvidos demonstraram
ausência de Coliformes a 45°C e Salmonella sp., indicando que os produtos
mostraram-se apropriados para consumo humano, de acordo com os padrões legais
vigentes. A taxa de permeabilidade de vapor de água obtida para as embalagens de
polietileno de alta densidade avaliadas foi 0,8 gH2O.m-2.dia-1 em umidade relativa de
90% a 30°C apresentando alta barreira ao vapor de água. Em relação à vida útil dos
alimentos desenvolvidos, estes apresentaram uma estimativa entre 9 e 11 meses.
Todos produtos desenvolvidos apresentaram composição que os caracterizam como
alimentos para praticantes de atividade física. Com isso, os repositores
hidroeletrolíticos podem ser consumidos antes, durante ou após a atividade física, os
potencializadores antes e os recuperadores durante e após.
The food intake is essential to keep the organism working and obtained nutrients will depend on the diet diversity and quantity. Sports results vary according to diet, physical activities and health condition. Improve performance, avoid diseases, have a well balanced diet, improve energy resources, fight against fatigue and obtained specific nutrients, to cope with intense physical activities are reasons to use supplements. The people who use such supplements can't absorb every necessary nutrients thru its daily diet. Spirulina is a microalga rich in protein, fatty acids, vitamins, minerals, which has been as supplement. Also this microalga has therefore certificate GRAS (Generally Recognized As Safe) it can be used as nutrient without health risks. The goal of this work was to develop six foods with or without Spirulina to physical activities practitioners. Hydroelectrolytic replacement, muscle recovery and muscle potentializer, all with and without the microalga were produced. All formulations were sensorial tested get to the final formula. After the chemical and microbiological analyses was done, in order to estimate shelf life of the products developed through an accelerate period of time. All done through mathematical model with relates the increased humidity from product and the level of permeability of the air in the package. All the food developed were acceptance means satisfactory, above 6.0. The microbiologic analyses made in all products developed show the absence of Coliformes in 45°C and Salmonella sp., showing that all products are recommended for human consumption agreeing with legal standards. The amount water steam permeability of polyethylene high density packages is 0,8 gH2O.m-2.day-1 with relative humidity 90% and 30°C showing high barrier for water steam. Shelf life from developed foods showed an estimated time of 9 to 11 months. All the products developed have showed composition that characterized then like food for physical activities practitioners.
