Renewable fuels, being cellulosic ethanol an example, can be obtained from various sources of biomass such as bagasses, cobs, straws, husks and other residues from agricultural and forestry production. In this way, the objective of this work was to develop a process of hydrothermal and enzymatic treatment to obtain reducing sugars from rice straw of BRS AG grow crop. The straw was, therefore, characterized in its proximal composition and cellulose amounts, hemicellulose and lignin and SEM images revealed the structure before and after the hydrothermal treatment. With the objective of finding the condition of enzymatic hydrolysis that provides the greatest concentration of reducing sugars, it was made factorial planning strategy with different operation limits of enzymatic hydrolysis, applying a factorial 23 with 4 repetition on central point planning and all treatments in duplicate. To evaluate which variable had greater influence over the system, it was observed that reaction time had a more pronounced effect, such that reactions that occurred in 24 hours the yield in reducing sugar was, in average, 1.7 g.L", while reactions that occurred in 72 hours the yield just doubled, that is, 3.4 g.L-1. It was observed the biggest influence of reaction time on the reducing sugar yield when compared to other factors considered. For the best condition of enzymatic hydrolysis it was conducted fermentation of the hydrolysate. It was noticed ethanol in solution after the fermentation of rice straw hydrolysates.
